Ingredients
1 cup tapioca flour (or granulated tapioca)
1 cup of grated coalho cheese (or other firm cheese of your choice)
1 cup of milk
salt to taste
1 tablespoon butter or margarine
Directions
- In a bowl, mix the tapioca flour with the grated coalho cheese and a pinch of salt.
- In a pan, heat the milk together with the butter or margarine until it boils.
- Turn off the heat as soon as it boils.
- Pour the boiling milk over the tapioca and cheese mixture, stirring well to incorporate all the ingredients.
- The dough will be sticky and homogeneous.
- Transfer the dough to a square mold or baking dish and smooth the surface with a spoon or spatula, leaving it with a uniform thickness, around 2 to 3 centimeters.
- Take the mold to the fridge and let the dough rest and firm for at least 2 hours, or until it is very firm to the touch.
- Preheat the oven to 200°C.
- Cut the dough into cubes or small rectangles to form the dadinhos.
- Place the dadinhos on a greased baking sheet or lined with parchment paper, leaving a little space between them.
- Place in the preheated oven for approximately 20 to 25 minutes, or until golden and crispy.
- Remove from oven and let cool slightly before serving.
