For your blender carrot cake to be fluffy and tasty, use the ingredients below and follow the step-by-step.

Ingredients

  • 2 cups of sugar

  • 3 eggs

  • 1 cup of milk

  • 1 cup butter or margarine at room temperature

  • 2 and 1/2 cups wheat flour

  • 1 tablespoon powdered yeast

  • 1/2 cup granulated chocolate

  • 1/2 cup grated coconut

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a medium round shape.
  • In a bowl, mix the wheat flour and baking powder.
  • Reserve.
  • In another bowl, beat the butter (or margarine) with the sugar until you get a fluffy cream.
  • Add the eggs, one at a time, beating well after each addition.
  • Alternately add the flour mixture and the milk to the dough, beginning and ending with the flour.
  • Mix well after each addition.
  • Add the granulated chocolate and grated coconut to the dough and stir gently until well distributed.
  • Pour the batter into the prepared tin and bake in the preheated oven for approximately 40 to 45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool for a few minutes in the tin before unmolding.
  • Once cold, you can decorate the cake with a topping of your choice, such as chocolate ganache or brigadeiro.
