Ingredients
1 and 1/2 cups wheat flour
3 eggs
1 cup of sugar
1/2 cup lemon juice
1/2 cup vegetable oil
1 tablespoon powdered yeast
zest of 2 lemons
- Syrup
3 tablespoons of lemon juice
1/2 cup icing sugar
Directions
- Preheat the oven to 180°C (medium temperature).
- Unite a form of cake with butter and wheat flour.
- In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
- Add lemon juice, vegetable oil and lemon zest to the egg-sugar mixture.
- Mix well.
- Add the sifted wheat flour little by little, stirring gently to incorporate the ingredients.
- Do not overmix as this will make the cake heavy.
- Add the baking powder and gently mix until well incorporated into the dough.
- Pour the batter into the greased tin and bake in the preheated oven for approximately 30 to 35 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
- While the cake bakes, prepare the syrup: in a small bowl, mix the icing sugar with the lemon juice until you get a homogeneous consistency.
- Remove the cake from the oven and let it cool for a few minutes.
- Make holes in the surface of the cake with a fork and pour the syrup over it.
- Let the cake cool completely before unmolding.
