Ingredients

  • 3 ears of green corn

  • 1/2 cup of cornmeal

  • 1 cup wheat flour

  • 3 eggs

  • 1/2 cup vegetable oil

  • 1 cup of sugar

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter or vegetable oil.
  • Remove the corn kernels from the cobs.
  • In a blender, beat the corn kernels with the eggs until you get a homogeneous mixture.
  • In a large bowl, add the whipped corn mixture, sugar and vegetable oil.
  • Mix well.
  • Add the wheat flour, cornmeal and salt to the bowl.
  • Mix until all ingredients are incorporated.
  • Lastly, add the baking powder and mix gently.
  • Pour the dough into the greased form and place in the preheated oven.
  • Bake the cake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes.
  • Then unmold and cool completely on a wire rack.
  • Serve the green corn cake in slices and enjoy!
