Ingredients

  • 2 tablespoons of olive oil

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 2 medium carrots, peeled and cut into rounds

  • 2 medium potatoes, peeled and diced

  • 2 chopped celery stalks

  • 1 medium zucchini, cut into cubes

  • 1 cup green beans cut into small pieces

  • 4 cups of vegetable broth

  • 1 cup of water

  • Salt and pepper to taste

  • Fresh basil leaves (optional, for garnish)

  • 1 teaspoon dry seasoning (such as oregano, thyme, parsley, etc.)

Directions

  • Heat the oil in a large pan over medium heat.
  • Add chopped onion and chopped garlic.
  • Saute for a few minutes until soft and lightly golden.
  • Add the carrots, potatoes, celery, zucchini and green beans to the pot.
  • Saute for a few more minutes, stirring occasionally.
  • Add the vegetable broth and water to the pan.
  • Season with salt, pepper and dry seasonings. 
    Shake well.
  • Bring the soup to a boil, then reduce the heat to medium-low.
  • Cook for about 20-25 minutes, or until the vegetables are tender.
  • When the vegetables are cooked, remove the pan from the heat and wait for it to cool down a bit.
  • Use a hand mixer or blender to puree the soup to a creamy consistency.
  • If you prefer, leave a few pieces of vegetables whole for a more rustic texture.
  • Warm the soup again before serving.
  • Serve the vegetable soup hot, garnished with fresh basil leaves on top, if desired.
