Follow the step-by-step instructions on how to prepare your Stuffed Potato to make it work!

Ingredients

  • 4 large potatoes

  • 1 tablespoon olive oil

  • pepper to taste

  • salt to taste

  • 1 cup of shredded cheese

  • 1/2 cup cooked and chopped bacon

  • 1/4 cup chopped chives

  • 1/4 cup of butter

  • 1/2 cup sour cream

  • 1/4 cup of milk

  • 1/2 cup sour cream (optional)

Directions

  • Preheat the oven to 200°C.
  • Wash the potatoes well and dry them with a paper towel.
  • Make small holes with a fork in each potato so that steam can escape during cooking.
  • Rub the potatoes with olive oil, salt and pepper, making sure they are well coated.
  • Place the potatoes directly on the oven rack or on a baking sheet and bake for about 1 hour, or until tender when pierced with a fork.
  • While the potatoes bake, prepare the stuffing.
  • In a bowl, combine the grated cheddar cheese, cooked and chopped bacon, and chives.
  • When the potatoes are ready, remove them from the oven and let them cool for a few minutes.
  • Cut the potatoes in half, lengthwise, and use a spoon to remove part of the pulp, creating a space for the stuffing.
  • Be sure to leave a thin layer of pulp around the edges of the potatoes to keep them firm.
  • In a bowl, love the pulp of the potatoes removed with a fork. 
    Add the cream, butter and milk, and mix well until you get a creamy consistency.
  • Season with salt and pepper to taste.
  • Mix half of the cheese, bacon and chive filling with the pulp of the mashed potatoes.
  • Reserve the other half to cover the potatoes.
  • With the potatoes already stuffed, place them in a baking dish and cover them with the rest of the cheese, bacon and chive filling.
  • Return the stuffed potatoes to the oven for another 15 minutes, or until the cheese is melted and bubbly.
  • Serve stuffed potatoes warm, with sour cream if desired.
