Ingredients
4 large potatoes
1 tablespoon olive oil
pepper to taste
salt to taste
1 cup of shredded cheese
1/2 cup cooked and chopped bacon
1/4 cup chopped chives
1/4 cup of butter
1/2 cup sour cream
1/4 cup of milk
1/2 cup sour cream (optional)
Directions
- Preheat the oven to 200°C.
- Wash the potatoes well and dry them with a paper towel.
- Make small holes with a fork in each potato so that steam can escape during cooking.
- Rub the potatoes with olive oil, salt and pepper, making sure they are well coated.
- Place the potatoes directly on the oven rack or on a baking sheet and bake for about 1 hour, or until tender when pierced with a fork.
- While the potatoes bake, prepare the stuffing.
- In a bowl, combine the grated cheddar cheese, cooked and chopped bacon, and chives.
- When the potatoes are ready, remove them from the oven and let them cool for a few minutes.
- Cut the potatoes in half, lengthwise, and use a spoon to remove part of the pulp, creating a space for the stuffing.
- Be sure to leave a thin layer of pulp around the edges of the potatoes to keep them firm.
- In a bowl, love the pulp of the potatoes removed with a fork.
Add the cream, butter and milk, and mix well until you get a creamy consistency. - Season with salt and pepper to taste.
- Mix half of the cheese, bacon and chive filling with the pulp of the mashed potatoes.
- Reserve the other half to cover the potatoes.
- With the potatoes already stuffed, place them in a baking dish and cover them with the rest of the cheese, bacon and chive filling.
- Return the stuffed potatoes to the oven for another 15 minutes, or until the cheese is melted and bubbly.
- Serve stuffed potatoes warm, with sour cream if desired.
