For your Carne de Panela to be at the ideal point, use the ingredients below and follow the step-by-step instructions.

Ingredients

  • 1 kg beef (preferably beef or muscle)

  • 2 big onions

  • 4 garlic cloves

  • 2 tablespoons of vegetable oil

  • 2 bay leaves

  • 2 large carrots

  • 2 ripe tomatoes

  • 2 cups beef broth or water

  • Salt and black pepper to taste

  • Chopped parsley to finish (optional)

Directions

  • Cut the meat into medium cubes, removing excess fat.
  • Peel and chop the onions and garlic.
  • Cut the carrots into slices and the tomatoes into cubes.
  • In a pressure cooker, heat the oil over medium heat.
  • Add chopped onions and garlic, and sauté until golden and soft.
  • Add the meat and season with salt and pepper to taste.
  • Brown the meat on all sides.
  • Add the carrots, tomatoes, bay leaves and enough beef broth or water to cover the meat in the pan.
  • Cover pressure cooker and cook over medium-high heat until pressure builds.
  • Reduce the heat to medium-low and simmer for about 40 to 50 minutes.
  • Turn off the heat and let the pressure release naturally before opening the pan.
  • Remove bay leaves and adjust seasoning if necessary.
  • If you want a thicker sauce, you can remove part of the broth from the pan and reduce it over medium heat until it reaches the desired consistency.
  • Serve the hot pot meat, accompanied by the reduced sauce and sprinkled with chopped parsley, if you prefer.
  • It can be accompanied by rice, mashed potatoes, vegetables or your choice.
