Ingredients
1 kg beef (preferably beef or muscle)
2 big onions
4 garlic cloves
2 tablespoons of vegetable oil
2 bay leaves
2 large carrots
2 ripe tomatoes
2 cups beef broth or water
Salt and black pepper to taste
Chopped parsley to finish (optional)
Directions
- Cut the meat into medium cubes, removing excess fat.
- Peel and chop the onions and garlic.
- Cut the carrots into slices and the tomatoes into cubes.
- In a pressure cooker, heat the oil over medium heat.
- Add chopped onions and garlic, and sauté until golden and soft.
- Add the meat and season with salt and pepper to taste.
- Brown the meat on all sides.
- Add the carrots, tomatoes, bay leaves and enough beef broth or water to cover the meat in the pan.
- Cover pressure cooker and cook over medium-high heat until pressure builds.
- Reduce the heat to medium-low and simmer for about 40 to 50 minutes.
- Turn off the heat and let the pressure release naturally before opening the pan.
- Remove bay leaves and adjust seasoning if necessary.
- If you want a thicker sauce, you can remove part of the broth from the pan and reduce it over medium heat until it reaches the desired consistency.
- Serve the hot pot meat, accompanied by the reduced sauce and sprinkled with chopped parsley, if you prefer.
- It can be accompanied by rice, mashed potatoes, vegetables or your choice.
