Ingredients

  • 1 ripe banana

  • 1 egg

  • 1/2 cup wheat flour

  • 1/2 teaspoon powdered yeast

  • A bit of salt

  • Oil or butter for greasing the skillet

  • Honey, maple syrup or other sweetener to taste (optional)

  • Fresh fruit, nuts or other ingredients to serve (optional)

Directions

  • In a bowl, mash the banana well until smooth.
  • Add the egg to the mashed banana and mix well.
  • Then add the wheat flour, baking powder and salt.
  • Mix everything until you get a smooth, lump-free dough.
  • Heat a non-stick frying pan over medium heat and grease it with a little oil or butter.
  • Pour about 1/4 cup of the batter into the skillet to form each pancake.
  • Cook for 2-3 minutes, or until the underside is browned and the edges are starting to pull away from the pan.
  • Flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until golden brown.
  • Repeat process with remaining batter, adding more oil or butter to skillet as needed.
  • Serve the banana pancakes hot, with honey, maple syrup, or another sweetener of your choice.
  • You can also add fresh fruit, nuts or other ingredients to decorate the pancakes.
