Ingredients
1 ripe banana
1 egg
1/2 cup wheat flour
1/2 teaspoon powdered yeast
A bit of salt
Oil or butter for greasing the skillet
Honey, maple syrup or other sweetener to taste (optional)
Fresh fruit, nuts or other ingredients to serve (optional)
Directions
- In a bowl, mash the banana well until smooth.
- Add the egg to the mashed banana and mix well.
- Then add the wheat flour, baking powder and salt.
- Mix everything until you get a smooth, lump-free dough.
- Heat a non-stick frying pan over medium heat and grease it with a little oil or butter.
- Pour about 1/4 cup of the batter into the skillet to form each pancake.
- Cook for 2-3 minutes, or until the underside is browned and the edges are starting to pull away from the pan.
- Flip the pancake with a spatula and cook for another 1-2 minutes on the other side, until golden brown.
- Repeat process with remaining batter, adding more oil or butter to skillet as needed.
- Serve the banana pancakes hot, with honey, maple syrup, or another sweetener of your choice.
- You can also add fresh fruit, nuts or other ingredients to decorate the pancakes.
