To make Carreteiro Rice, use the ingredients below and follow the step-by-step instructions for preparation.

Ingredients

  • 2 cups of rice

  • 500 grams of dried meat

  • 2 garlic cloves, minced

  • 1 medium onion, chopped

  • 2 tablespoons of vegetable oil

  • 1 green pepper, chopped

  • 1 large tomato, chopped

  • 2 tablespoons chopped parsley (parsley and chives)

  • Black pepper to taste

  • Salt to taste

  • 4 cups of boiling water

Directions

  • Soak dried meat in cold water for at least 4 hours to desalt.
  • Change the water a few times during this period.
  • Then drain the water and cut the meat into small cubes.
  • In a large pan, heat oil over medium heat.
  • Add the onion and garlic and sauté until golden.
  • Add the dried meat to the pan and sauté for a few minutes, stirring constantly.
  • Add chopped tomatoes and peppers.
  • Sauté for a few more minutes, until the vegetables soften.
  • Add the rice to the pan and mix well with the other ingredients, sautéing for a few more minutes.
  • Season with salt and pepper to taste.
  • Pour boiling water into the pan and stir gently.
  • Reduce the heat to low, cover the pan and let it cook for about 15 to 20 minutes, or until the rice is cooked through and the water has been absorbed.
  • Turn off the heat and let the rice rest for a few minutes.
  • Before serving, sprinkle chopped parsley on top.
