Ingredients

  • 2 cups of cooked rice

  • 1 cooked and shredded chicken breast

  • 1 can of green corn

  • 1 can of peas

  • 1 medium grated carrot

  • 1 chopped onion

  • 2 minced garlic cloves

  • 1/2 chopped red bell pepper

  • 1/2 chopped green pepper

  • 1 chopped tomato

  • 1 cup grated mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 cup mayonnaise

  • 1/2 cup of milk

  • 2 tablespoons of olive oil

  • Salt and pepper to taste

  • Chopped parsley to taste

Directions

  • Preheat the oven to 180°C.
  • In a pan, heat the olive oil and sauté the onion, garlic and peppers until soft.
  • Add the shredded chicken and sauté for a few more minutes.
  • Add the corn, peas, grated carrots and chopped tomatoes. 
    Season with salt and pepper to taste. 
    Cook for a few more minutes until the vegetables are lightly cooked.
  • In a large bowl, mix the cooked rice, the chicken and vegetable stew, the grated mozzarella cheese, the mayonnaise, the milk and the chopped parsley. 
    Stir well to combine all ingredients.
  • Transfer the mixture to a refractory greased with olive oil.
  • Sprinkle the grated Parmesan cheese over the rice.
  • Place in the preheated oven and bake for about 30 minutes, or until the cheese is golden brown and bubbly.
  • Remove from oven and let rest for a few minutes before serving.
