Ingredients

  • 2 tablespoons of tapioca (or tapioca gum)

  • 2 eggs

  • Salt to taste

  • 1 tablespoon grated cheese (optional)

  • Stuffing of your choice (cheese, ham, shredded chicken, vegetables, etc.)

Directions

  • In a bowl, beat the eggs until well blended.
  • Add tapioca, grated cheese (if using) and salt.
  • Mix everything until you get a homogeneous mass.
  • Heat a nonstick skillet over medium heat.
  • Pour the batter into the hot skillet, spreading it out evenly to form a disk.
  • Let it cook for a few minutes until the underside is firm and starts to disgrace from the skillet.
  • With the help of a spatula, turn the crepioca to cook the other side.
  • If desired, add the filling of your choice over half of the crepioca before folding it in half.
  • Let it cook for a few more minutes until the filling melts (if it is cheese) and the crepioca is lightly golden.
  • Remove the crepioca from the skillet and serve hot.
