Ingredients

  • 2 medium carrots

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups of wheat flour

  • 2 cups of sugar

  • 1 tablespoon powdered yeast

  • 4 tablespoons cocoa powder

  • 4 tablespoons of butter

  • 6 tablespoons of sugar

  • 6 tablespoons of milk

Directions

  • Preheat the oven to 180°C. 
    Unite a round shape of approximately 24 cm in diameter with butter and sprinkle with wheat flour.
  • Peel and grate the carrots finely. 
    Reserve.
  • In a large bowl, beat the eggs with a whisk or hand mixer until well blended. 
    Add the oil and sugar, and continue beating until you get a homogeneous mixture.
  • Add the grated carrot to the dough and mix well.
  • Add the sifted wheat flour and baking powder to the mixture and stir gently until you get a smooth, homogeneous dough.
  • Pour the batter into the prepared tin and bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking, prepare the chocolate frosting. 
    In a pan, melt the butter over low heat. 
    Add the cocoa powder, sugar and milk, and stir until the mixture is smooth and creamy.
  • Remove from heat and set aside.
  • Remove the cake from the oven and let it cool completely before unmolding.
  • Turn the cake out onto a serving plate and top with the chocolate frosting, spreading it evenly over the cake.
  • Wait for the frosting to harden a little before serving. 
    The fluffy carrot cake is ready to be enjoyed!
