minutesRice balls are a delicious option to use leftover rice and turn them into a new and tasty meal.
Here is a basic recipe for making rice balls:
Ingredients
2 cups of cooked rice
2 eggs
2 tablespoons wheat flour
1/2 cup of grated cheese (you can use mozzarella, parmesan or other cheese of your choice)
2 tablespoons chopped parsley (optional)
Salt and pepper to taste
Vegetable oil for frying
Directions
- In a large bowl, combine cooked rice, grated cheese, eggs, flour and chopped parsley (if using).
- Season the mixture with salt and pepper to taste and stir well until you get a homogeneous mass.
- Heat a frying pan with enough vegetable oil to cover the bottom.
- With your hands moistened in water, take portions of the dough and mold small rice balls.
- Place the rice balls in the preheated skillet and fry over medium-high heat until browned and crispy on all sides.
- Remove the dumplings from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Repeat process with remaining batter, adding more oil to skillet as needed.
- Serve the rice balls hot as an appetizer, side dish or even as a main course.
They are great to enjoy with sauces such as spiced mayonnaise, chili sauce or soy sauce.
