Rice balls are a delicious option to use leftover rice and turn them into a new and tasty meal. 
Here is a basic recipe for making rice balls:

Ingredients

  • 2 cups of cooked rice

  • 2 eggs

  • 2 tablespoons wheat flour

  • 1/2 cup of grated cheese (you can use mozzarella, parmesan or other cheese of your choice)

  • 2 tablespoons chopped parsley (optional)

  • Salt and pepper to taste

  • Vegetable oil for frying

Directions

  • In a large bowl, combine cooked rice, grated cheese, eggs, flour and chopped parsley (if using).
  • Season the mixture with salt and pepper to taste and stir well until you get a homogeneous mass.
  • Heat a frying pan with enough vegetable oil to cover the bottom.
  • With your hands moistened in water, take portions of the dough and mold small rice balls.
  • Place the rice balls in the preheated skillet and fry over medium-high heat until browned and crispy on all sides.
  • Remove the dumplings from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  • Repeat process with remaining batter, adding more oil to skillet as needed.
  • Serve the rice balls hot as an appetizer, side dish or even as a main course. 
    They are great to enjoy with sauces such as spiced mayonnaise, chili sauce or soy sauce.
