Let’s make the Fofinho Cornmeal Cake recipe using the ingredients below following the step-by-step preparation method.

Ingredients

  • 2 cups of cornmeal

  • 1 cup wheat flour

  • 1 cup of milk

  • 2 cups of sugar

  • 1/2 cup oil

  • 3 eggs

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

Directions

  • Preheat the oven to 180°C and grease a round mold with butter and flour.
  • In a large bowl, mix the cornmeal, wheat flour, sugar and salt.
  • In another bowl, beat the eggs with a fork and add the milk and oil. 
    Mix well.
  • Pour the liquid mixture into the bowl with the dry ingredients and stir until you get a homogeneous mass.
  • Add the baking powder and mix gently.
  • Pour the batter into the greased tin and bake in the preheated oven for approximately 40-45 minutes, or until the cake is golden and firm. 
    Do the toothpick test: insert a wooden toothpick into the center of the cake, and if it comes out clean, the cake is done.
  • Remove from the oven and let the cake cool slightly before unmolding. 
    Then place it on a serving plate.
