Ingredients
6 ripe tomatoes
1 large chopped onion
2 minced garlic cloves
1 tablespoon of sugar
1 liter of vegetable broth
1/4 cup chopped fresh basil
Salt and black pepper to taste
Olive oil for sautéing
Toasted bread or croutons to serve (optional)
Directions
- Start by sautéing the onion and garlic in a large pan with a little olive oil until soft.
- Add chopped tomatoes, sugar, vegetable broth, salt and pepper and mix well.Â
Let it boil. - When the soup is hot, add the basil and mix.
- Let cook for about 20 minutes, stirring occasionally.
- Beat the soup with a blender or mixer until a homogeneous consistency.
- Return the soup to the pot and return to the heat for another 5 minutes to warm up.
- Serve warm with toasted bread or croutons if desired.
