The soup is cooked slowly so the flavors are well incorporated and is usually served with toasted bread or croutons.

Ingredients

  • 6 ripe tomatoes

  • 1 large chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon of sugar

  • 1 liter of vegetable broth

  • 1/4 cup chopped fresh basil

  • Salt and black pepper to taste

  • Olive oil for sautéing

  • Toasted bread or croutons to serve (optional)

Directions

  • Start by sautéing the onion and garlic in a large pan with a little olive oil until soft.
  • Add chopped tomatoes, sugar, vegetable broth, salt and pepper and mix well. 
    Let it boil.
  • When the soup is hot, add the basil and mix.
  • Let cook for about 20 minutes, stirring occasionally.
  • Beat the soup with a blender or mixer until a homogeneous consistency.
  • Return the soup to the pot and return to the heat for another 5 minutes to warm up.
  • Serve warm with toasted bread or croutons if desired.
