Ingredients

  • 4 eggs

  • 1 cup chopped spinach

  • 1/2 cup mashed ricotta

  • 1 tablespoon chopped chives (optional)

  • Salt and pepper to taste

  • 1 tablespoon olive oil or butter for greasing the skillet

Directions

  • In a bowl, beat the eggs with a fork or whisk.
  • Add the spinach, ricotta, chives (if desired), salt and pepper and mix well.
  • Heat a nonstick skillet over medium heat.
  • Add oil or butter and let it melt.
  • Add egg mixture to skillet and cook for about 2-3 minutes or until underside is set.
  • Using a spatula, fold the omelette in half.
  • Let cook for another 1-2 minutes or until cooked through.
  • Is ready!
