Ingredients
4 eggs
1 cup chopped spinach
1/2 cup mashed ricotta
1 tablespoon chopped chives (optional)
Salt and pepper to taste
1 tablespoon olive oil or butter for greasing the skillet
Directions
- In a bowl, beat the eggs with a fork or whisk.
- Add the spinach, ricotta, chives (if desired), salt and pepper and mix well.
- Heat a nonstick skillet over medium heat.
- Add oil or butter and let it melt.
- Add egg mixture to skillet and cook for about 2-3 minutes or until underside is set.
- Using a spatula, fold the omelette in half.
- Let cook for another 1-2 minutes or until cooked through.
- Is ready!
