Alfajores are a typical sweet from Argentina, Chile, Uruguay and Peru, they are composed of two thin and crunchy biscuits made with wheat flour, sugar and butter, they are united by a layer of dulce de leche or caramel, and in some cases are also covered with chocolate. There are several variations of alfajores and each country has its own version.

They are very popular in Latin America and are often eaten as a snack or dessert.
They are also commonly sold in supermarkets and pastry shops.
Ingredients
2 cups of wheat flour
1/2 cup of sugar
1/2 cup unsalted butter, softened
1 egg
1 teaspoon vanilla essence
1 cup of milk jam
1/4 cup sugar
1/4 cup of milk
1 tablespoon of butter
1/2 cup melted chocolate (optional)
Directions
- Preheat the oven to 180°C (350°F) and cover a baking sheet with parchment paper.
- In a large bowl, mix the flour, sugar and softened butter until a smooth dough forms.
- Add the egg and vanilla essence and mix again until a smooth dough forms.
- Form the dough into a ball and place it between two pieces of parchment paper.
- Roll out the dough with a rolling pin until it is about 1/4 inch thick.
- Use a cookie cutter to cut the cookies into shapes of your choice and place them on the prepared baking sheet.
- Bake for about 12-15 minutes, or until cookies are lightly browned.
- Let cool.
- While the cookies cool, prepare the filling.
- In a medium saucepan, combine the dulce de leche, sugar, milk and butter.
- Bring to a boil over medium heat and stir continuously until the mixture is smooth and starts to thicken.
- Let cool.
- When the biscuits and filling are cool, place a small amount of filling on one side of one biscuit and press another biscuit on top, forming a sandwich.
- Repeat with the other cookies.
- If desired, dip the edges of the alfajores in melted chocolate and let cool until the chocolate is set.
- Serve and enjoy!
