These Mexican Burritos were perfect using the ingredients from the list below and following the step-by-step preparation method.

Ingredients

  • 4 wheat tortillas

  • 1 cup cooked beans

  • 1 cup cooked and shredded chicken

  • 1/2 cup grated cheese

  • 1/2 cup chopped tomato

  • 1/2 cup chopped lettuce

  • 1/4 cup chopped onion

  • 1/4 cup chopped red bell pepper

  • 2 tablespoons of olive oil

  • Salt and pepper to taste

Directions

  • In a medium saucepan, heat the oil over medium heat.
  • Add the onion and bell pepper and cook for about 5 minutes, until they are soft.
  • Add the chicken, beans, tomatoes and a pinch of salt and pepper.
  • Cook for another 5 minutes, until the chicken is hot and the tomatoes are tender.
  • Meanwhile, heat the tortillas in a skillet over medium heat for about 30 seconds on each side.
  • Spoon about 1/4 cup of the chicken and bean mixture onto each tortilla.
  • Add a tablespoon of grated cheese, lettuce and other ingredients of your choice.
  • Roll each tortilla like a burrito, tucking the sides inward.
  • Is ready!
