minutesPaella Valenciana is a typical recipe from the Valencia region of Spain and is a very popular dish throughout the country.
Ingredients
1 cup rice bomb
1/2 cup olive oil
1 large onion, chopped
2 garlic cloves, minced
1 ripe tomato, chopped
1/2 cup frozen peas
1 cup cooked chicken, shredded
1 cup cooked shrimp
1 cup mixed seafood (optional)
2 cups of chicken broth
1 tablespoon saffron
Salt and pepper to taste
Fresh parsley leaves to garnish
Directions
- In a large pan, heat the olive oil over medium heat.
- Add the onion, garlic and tomato and sauté until soft.
- Add the peas, chicken, shrimp and seafood (if using) and mix well.
- Add the rice to the pan and mix well with the other ingredients.
- Add the chicken broth, saffron, salt and pepper and mix again.
- Let the paella cook over medium heat for about 20-25 minutes, or until the rice is tender and the broth is absorbed.
- When ready, turn off the heat and let it rest for a few minutes before serving.
- Garnish with fresh parsley leaves and serve hot.
