The texture of this bombocado cake is as amazing as its flavor!

Ingredients

  • 4 whole eggs

  • 2 cups wheat flour (tea)

  • 2 cups whole milk (tea)

  • 2 cups of sugar (tea)

  • 1 tablespoon baking powder for cake

  • 1 tablespoon butter or margarine

  • 50 grams of grated Minas cheese

  • 50 grams of grated coconut

Directions

  • Add the eggs and sugar to a bowl, mix well, then add the butter or margarine and mix again.
  • Add the wheat flour, the grated cheese, part of the grated coconut (reserve a little for finishing) and stir very well.
  • Put the whole milk and stir for at least 2 minutes. 
    Add the baking soda and mix delicately until homogenized.
  • Transfer the dough to a greased shape and finish adding grated coconut to taste on top.
  • Bake in a preheated oven at 180º₢ for about 40 minutes or until golden brown.
  • Unmold the cake after it has cooled to room temperature, cut as you like and the creamy sponge cake is ready.
